Bean Sprout w/Fresh Shitake Mushroom & Fish Maw

Tonight Aunt cooked a new vegetable dish which includes all my favourite stuffs. Beansprout, Shitake mushroom, Spring onion and fish maw. So yummy!

400g Silver sprout
4 stalks Spring onion (cut 1.5" lengthwise)
4 pcs Shitake mushroom (cut into strips)
2 nos Red chillies (shredded)
2"sq Fish maw (soften & cut into strips)
2 clove garlic (Chopped)

2 tbsp Stock
1/2 tsp Sugar
1/2 tsp Salt
1/2 tsp Fish sauce
1 tsp Wine
1 tsp Sesame oil
Thickening: 1 tsp cornflour mix with 1/2 tbsp water

1. Use 4 tbsp oil to fry garlic till golden.
2. Add mushroom & fish maw to saute.
3. Add beansprout & fry awhile.
4. Add sauce & stir well till almost cooked.
5. Add thickening, spring onion & chillies, mix well.
6. Dish out & serve.
