Cranberry Orange Yogurt Cake

Made this cake for my Uncle wishing him "A Happy Daddy Day"! It's a very moist and not overly sweet butter yogurt cake with cranberry & a hint of orange fragrant. Recipe adapted & modified from Richard Goh's Baking Class.

Cranberry Orange Yogurt Cake



Ingredients:
(A)
250g Butter (Cold)
180g Sugar
5 Egg yolks

(B) - mix together
2tbsp Orange rind
2tbsp Orange juice
1tsp Orange flavor (optional)
250g Non fat unsweetened yogurt
100-120g Dried Cranberry

(C) - sieve
250g Plain flour
2tsp Baking powder

(D)
5 Egg whites
40g Sugar
1/4tsp Cream of tartar

Method:
Preheat oven at 150 deg C
1. Cream butter & sugar till light & fluffy.
2. Add in egg yolks & mix well.
3. Add in (B).
4. At min speed, add (C) and mix well, set aside.
5. Whisk egg white till foamy, then add in sugar & cream of tartar, continue to whisk till stiff.
6. Fold in half of the meringue into the butter mixture and mix well. Then pour it into the balance meringue & continue to fold well.
7. Pour into a 9" round (side & bottom line w/paper) and bake for 1 hour till cooked.

You can buy the yellow raddish from Coldstorage and any korean grocery stores.

Sorry for my late reply as I just came back from vacation. I use a spatular to fold in the 2 mixture. Happy baking!
