Cream of Chicken Macaroni Soup

Chance upon a youtube video using Campbell's soup to cook macaroni! After visualising it, I think it will work so decided to give it a go. This is a very easy meal to cook, especially when you want to clear off leftover like roast chicken, ham, sausages and veg! You can simply add anything you like. Verdict: Very delicious! A hearty and satisfying bowl of macaroni soup! Glad I try it.

Cream of chicken macaroni soup
Ingredients (serve 2-3)
Cooked macaroni till slightly undercooked - portion for 2-3 pax
1 can Campbell's cream of chicken condensed soup
1 small yellow onion chopped
Broccoli (bitesize)
150ml chicken stock or water
500ml water or more
Some homemade croutons (recipe reference: Table for 2.... or more)
Black pepper

Optional (up to personal preference)
Cooked chicken breast meat (small cubes)
Sausages (sliced)
Button mushroom - canned (sliced)



Method:
1. Heat pot with olive oil, sauté chopped onion till soft n fragrant. Add in stock n water. Bring it to boil.
2. Add in cooked macaroni n Campbell's condensed chicken soup. Stir well n bring it to boil. Add more water if it is too thick or salty. 
3. Add in the rest of the ingredients. Simmer till the broccoli is cooked. Add black pepper. 
4. Top with croutons and serve.
