Cranberry Pound Cake


Baked this Cranberry pound cake sometimes ago and love it. Taste and texture are lovely. Another simple recipe adapted from Corner Cafe that is definitely a keeper!



Cranberry Pound Cake
Ingredients:
120g Cake flour
1 tsp Baking powder
100g Butter (room temp.)
100g Caster sugar
2 eggs
Finely grated zest of 1 lemon
50g Dried cranberry (roughly chopped) 
1 tbsp lemon juice




Method:
Preheat oven at 170°C. Line the base of the 8" by 3" loaf tin.
1. Sift together flour and baking powder, set aside.
2. Mix chopped cranberry with lemon juice in a microwaveable bowl. Cover and microwave on high for 1 min. Set aside to cool.
3. Cream butter and sugar until pale and fluffy. Beat in eggs, one at a time, and beat well to combine after each addition. Stir in lemon zest and the cooled cranberry mixture.
4. Fold in sifted flour mixture gradually.
5. Pour batter into the prepared tin and bake for 40 – 45 minutes, or until cooked when tested with a skewer.
