Sliced Fish with Ginger and Spring Onion



Aunt's Recipe
Ingredients:
500g red garouper fish (thickly sliced, seasoned with 2 tsp light soy sauce & 2 tsp sesame oil)
15 ginger slices
4 stalks spring onion (cut lengthwise)
1 red chilli (sliced)
Potato flour for frying
Sesame oil for frying ginger

Sauce:
100ml stock (if using water, add 1tsp concentrated stock)
3/4 tsp sugar
1/2 tbsp LKK premium light soy sauce
1 tsp LKK premium oyster sauce
2 tsp wine
1 tbsp sesame oil

Thickening: 1 tsp cornflour + 1 tsp water

Method:
1. Dust fish with potato flour and deep fry till golden. Set aside,
2. Heat up wok with sesame oil and add ginger slices, fry till golden.
3. Add sauce and bring it to boil. Add thickening.  
4. Add in spring onion and chilli, mix well.
5. Add fried fish and mix well so the sauce coat the fish evenly. Dish out.

Steamed Minced Pork with Salted Fish and Mushroom


Steamed Minced Pork with Salted Fish & Mushroom


Aunt's Recipe:
200g minced pork
1 dried mushroom (softened and chopped)
1 tsp fried & grounded flat fish
1 water chestnut - coarsely chopped
1 small slice panfried mui hiang salted fish 

Seasoning:
1/2 tsp sugar
1/8 tsp salt
2 tsp light soy sauce
1 tsp sesame oil
1/2 tsp wine
1/4 tsp cornflour

Sauce:
2 tbsp stock
Sesame oil, wine and pepper to taste
Method:
1. Mix minced pork, grounded flat fish and chopped water chestnut thoroughly with seasoning, Leave in the fridge to season for at least 1 hour.
2. Flatten the minced pork mixture on the plate. 
3. Top with pan fried salted fish pcs.
4. Pour in the sauce.
5. Steamed at high heat for 10 mins or till cook.

Birthday Cakes 2015


I made a resolution in 2015 that I will try to make as many birthday cakes as possible for people around me! So as the year 2015 is ending soon, time to reflect! Yes I did fulfill this resolution as I baked 16 cakes in total which break my own record since I started to have interest in baking many years ago! A summary of the birthday cakes I made in the year 2015 for family, friends and colleague. Though not perfect and far from professional but really took lots of effort to do it.
