Butter cake is one of my most frequent bakes because my family and colleagues love it especially my brother. Here's one of my recent favourite recipe fromCooking Crave! I had made this cake years ago (here) and just forgotten how good is it till I baked it again recently.

Initially bought a bottle of sour cream to make cheese cake but never get into doing it till the sour cream was almost expiring! Didn't want to waste it so started goggling around for a simple recipe using sour cream and obliviously making a butter cake is the easiest!

I wanted to finish off the condensed milk lying in my fridge so decided to give this recipe a go. Bookmarked this recipe sometimes ago from Bisous a toi. Thanks Rima for sharing such an easy and good pound cake recipe. What attracted me to this recipe was not only it was highly recommended but also the method. This recipe added eggs at the last stage which I have not tried before. I was wondering by doing so... does it contribute to the fine and dense texture? Anyway this was very well received by my family and colleagues.

This is a very delicious orange cake, very soft, light, crumbly, flavourful and buttery! Highly recommended by Jess. I tried out the recipe right away the next day after seeing her post. I been baking durian related cakes quite frequent recently trying to clear my frozen durian flesh stock. Decided to try out another Richard Goh's recipe - Durian Butter Cake. To make it more interesting, I added some Oreo cookies in.
Oreo Durian Butter Cake
Original recipe adapted & modified from Richard Goh Baking Class (Stage 4). Ingredients (A):
100g Butter (chilled)
70g Castor sugar
5 Egg yolks
130g Cake flour
1 tsp Baking powder (double action)
1 tbsp Rum
130g Durian flesh, blended
50g Oreo Cookies (remove cream & crush)
Method:
Preheat oven at 170 deg C. Baking tray (brownie tray) - 8" x 13", line the base.
1. Cream butter & sugar at medium speed until fluffy. Add in egg yolks one at a time till well incorporated.
2. Add in durian flesh & rum, mix well.
3. Switch to slow speed, add in sifted flour & baking powder. Leave aside.
4. Whisk (B) at maximum speed unit stiff peak.
5. Fold egg white mixture into butter mixture and mix well. Lastly add in crushed oreo cookies. Leave some for topping.
6. Pour batter into baking tin, sprinkle balance crushed oreo cookies on top.
7. Bake for 30-35 mins.
This is one of my favourite butter cake recipe which I had baked once, recipe by Florence of Do What I Like. Just before the year 2010 ended, I baked it again. Using a new loaf tin and don't know why the side just turn golden.

A delicious and flavourful marble cake, fluffy soft and moist. Recipe shared by Honey Bee Sweets. Saw both Bakericious & Passionate about baking attempted this recipe and gave very good reviews on it. So I decided to try it too. Oohs... very well received by family and colleagues! Definitely a keeper recipe!
Made slight changes to the recipe based on whatever I have.
* Reduce a bit of sugar (350g to 330g).
* Run out of unsalted butter so used salted one. Anyway I like butter cake to be more salty. Since using salted butter, reduce salt to 1/4tsp instead of 1/2tsp.
* Used chilled instead of room temperature butter. I find that using chilled butter to beat till light and fluffy, the cake texture will be lighter & fluffier.
* Reduce vanilla to 2 tsp instead of 2.5 tsp since I added vanilla bean extract.
* A tub of sour cream weight only 190g so added 20g of yogurt to make up 210g as required in the recipe.
* Substitute half plain flour with cake flour. Trying to finish off my balance cake flour.
* Used 2.5 tsp double action baking powder instead of 2 & 3/4 tsp baking powder.
* Used 1/4 cup choc chips instead of 1/3 cup
* As my oven temperature is usually higher, so I baked at 170 instead of 180 deg c.
Chocolate Paste
3 tbsp Varlhona cocoa powder
3 tbsp hot water
Method:
Preheat the oven to 170 deg C. Grease the bundt pan.
1. In a large bowl, mix the cocoa powder and the hot water together to make a smooth paste. Set aside.
2. Cream butter and sugar together till light and fluffy. Blend in the eggs and then vanilla gradually till well mix. Then add in the sour cream and evenly combined.
3. Fold in the flour, baking powder, baking soda, salt and blend well. Lastly, mix in the chocolate chips into the batter and mix well.
4. Add 1/3 of the batter into the chocolate paste's bowl (1) and mix well.
5. Spoon in big scoops of vanilla batter into the bundt pan and alternating with chocolate batter as well to create the marble effect. Repeat till all the batter has been put in.
6. Bake in the center rack for the 1st 30mins, then transfer to the lowest rack for another 10 to 20 mins depending on your oven. Total baking time approx 40 to 50 mins. Bake till golden brown and the tester comes out clean.
7. Once baked, remove from pan and let it cool on rack.

Goggle around for recipes using Baileys Irish cream and found this. Quite nice but I think I have overbake so it was a bit dry.
Ingredients:
120g butter
2 eggs
175g brown sugar
250g cake flour
1tsp baking powder
1tsp bicarbonate of soda
3tbsp Baileys Coffee Liquer
5tbsp Nestum
200g Mashed bananas
60g toasted walnuts or pecans - coarsely chopped
Method:
1. Cream butter with brown sugar till light and fluffy. Add in egg one at at time making sure it's well combined before the next addition.
2. Slowly add in flour, baking powder and bicarbonate of soda. Then add in the rest of the ingredients and mix well.
3. Pour into a 2 loaf pan 8" x 3" or bake in a 9" square tray.
4. Bake in preheated oven at 180C for about 40 mins. or until cooked.
