Recipe adapted from Aunty Yochana
Goggle around for recipes using Baileys Irish cream and found this. Quite nice but I think I have overbake so it was a bit dry.
Ingredients:
120g butter
2 eggs
175g brown sugar
250g cake flour
1tsp baking powder
1tsp bicarbonate of soda
3tbsp Baileys Coffee Liquer
5tbsp Nestum
200g Mashed bananas
60g toasted walnuts or pecans - coarsely chopped
Method:
1. Cream butter with brown sugar till light and fluffy. Add in egg one at at time making sure it's well combined before the next addition.
2. Slowly add in flour, baking powder and bicarbonate of soda. Then add in the rest of the ingredients and mix well.
3. Pour into a 2 loaf pan 8" x 3" or bake in a 9" square tray.
4. Bake in preheated oven at 180C for about 40 mins. or until cooked.
