Mango Almond Biscuit

I was attracted by the picture in the cookbook and since then has listed it in my to bake list.Baked this cookies few days however it didn't out well. I'm not sure is it due to my fault or the recipe as the cookie was too flat or maybe I overbeat the butter. This cookies turn soft easily and the centre was a bit chewy. To make it crispier, rebaked it again & leave it in the oven to cool. Then it will be very crispy and even the center will be hardened. I suggest to reduce the sugar as most of them that tasted it commented too sweet. If you like butter & mango, this will be a very nice cookies. It's very buttery & fill with mango fragrance. I will definitely test it out again.



Recipe adapted from "Sweet & Simple Cookies by Kevin Chai"
Ingredients:
125g Butter
125g Icing sugar (reduced to 100g)
1 Egg
125g Plain flour
20g Milk powder
1/4tsp Bicarbonate of soda

Mango Batter:
50g butter (softened)
50g Icing sugar (reduced to 30g)
50g Mango concentrated
50g Plain flour
20g Almond flakes (coarsely crushed)

Methods:
1. Beat butter and icing sugar until light & fluffy. Add in egg, beat until well blended.
2. Add in sifted flour, milk powder & soda. Mix well.
3. Spoon batter into piping bag fitted with round nozzle. Pipe a small circle into baking tray.
4. To make mango batter, stir butter, icing sugar, mango concentrated & flour until well blended. Spoon into the centre of circle. Sprinkle with almond flakes.
5. Bake in preheated oven at 170 degree C for 15-20mins.
