Last homecooked lunch for Year 2010

31st Dec 2010

On the last day of the year 2010, I cooked a simple and delicious lunch for my family. Japanese curry is probably one of the easiest dish on earth to prepare and yet it can taste like restaurant's standard. Served it with good quality Japanese rice, definitely is a comfort dish to me. Mine is the quick and simple version as I used sliced saute beef instead of beef cubes, so don't need to stew it till the beef tender.

Japanese beef curry with rice

Ingredients: (Serve 4)
1 box (100g) Golden Curry sauce mix - hot
400g Sliced Beef (seasoned with some meat tenderiser)
2 nos Carrots (sliced thickly)
1 no Yellow Onion (slice into wedges)
2 tbsp Frozen Green Peas
2 Cups of Stocks/Water

Method:
1. In a large skillet, heat up 2 tbsp of olive oil and stir fry onions and carrots till fragrant. Add stock/water and bring to boil for 10-15min till carrot is cooked.
2. Break the curry paste into small cubes and add in.
3. Stir well and add in beef and green peas. Cooked for awhile about 5 mins till cooked.
4. Serve it with warm Japanese rice.

* Can add vegetables like celery and potatoes, used chicken instead of beef. Or you can cook a vegetables curry served it with deep fried chicken chops/nugget and fish fillet etc.
