I baked quite a few fruit cakes this year for friends and family. They love it and so I will bake it for them every Christmas!
To enhance the taste of the fruit cake, additional brandy/rum can be added onto the baked fruit cake.
Recipe adapted and modified from Richard Goh baking class, original recipe refers to here.
Ingredient:
250g Unsalted Butter (chilled)
140g Brown sugar
5 Egg yolks
250g Plain flour
2 tsp Baking powder
1 tsp Vanilla paste
1/4 tsp Salt
1.5 tbsp Dark corn syrup
120g Walnuts (toasted & chopped coarsely)
550g Mixed dried fruits (Marinate the fruits in 150g of any Brandy/Rum of your choice with 1/2 cup water for 1 day at room temperature)
5 Egg whites
30g Brown sugar
1/4 tsp Cream of tartar
Optional - pecans, red and green cherries for topping
Method:
Preheat oven to 160 degree C.
Grease and line a deep 9" (or 2x6") round baking tin with paper.
1. Bring soaked fruit mixture to boil, simmer till the fruits are plump and the liquid all absorbed. Cool before use.
2. Sieve flour and baking powder together, set aside.

3. Cream butter & sugar and salt at medium speed until light & fluffy.
4. Decrease to slow speed, add in egg yolks and vanilla paste till well mix. Add in corn syrup and mix well.
5. Slowly add in mixed fruits & chopped walnuts. Then add sifted flour & baking powder. Leave aside.

6. Whisk egg white, sugar and cream of tartar at max speed until stiff.
7. Combine butter & egg white mixture till well mix.
i dun really fancy fruit cake, the taste and texture are abit too much for me
