Baked Pasta with Homemade Tomato Sauce

Baked macaroni with homemade tomato minced meat sauce! Brought this to work few days ago for lunch to share with my colleagues. They love it! Here's another easy recipe to try!  

Cheesy baked macaroni with rich meat sauce is so irresistable!

Cooked macaroni/any type of pasta
200ml basic tomato sauce (recipe refers to below)
100g minced pork (seasoned with soy sauce, salt n pepper)
Half can sliced button mushroom
Perfect Italiano perfect bakes cheese.
Sausages (optional) - I always go for Johnsonville brat!

Black pepper
1/2 tsp dried Italian herbs

1. Heat pan with olive oil, fry pork n mushroom. Add in basic tomato sauce, black pepper n herbs. Simmer till pork is cooked.
2. Mix cooked macaroni with meat sauce. Place in a baked dish.
3. Top with sausages or ham or cooked seafood or anything you like. ( must be cooked ingredients)
4. Top with cheese n baked till cheese melted n golden.

I always make 2 recipes n pack into small portions then freeze it up.

Basic tomato sauce

45g Tomato paste
400g Hunt diced canned tomatoes
300ml Stock/water
80ml Extra Virgin Olive Oil
50g Onion - finely chopped
50g Carrots - finely chopped
50g Celery - finely chopped
1piece Bay leaf
1tsp Garlic - finely chopped

Salt and pepper to taste
Sugar to taste - optional, add a bit if the sauce is too tard. 

1. Heat the olive oil in a saucepan. Sauté the garlic until fragrant and add in the onions, carrots, celery and bay leaf. Sauté until fragrant.
2. Stir in the tomato paste and cook for 2 minutes until a bright red colour.
3. Pour in the chopped tomatoes, juice and stock, bring to boil and simmer for 20 mins. Season with salt n pepper.
4. Cool and freeze the tomato sauce. Use as when needed.

Sometimes I made it without minced meat. Just toss the cooked pasta with the basic tomato sauce. Top with meatballs and cheese to bake. Very nice too!

Easy Baked Cheesy Rice! Fried rice with capsicum, shitake mushroom and egg. Top with Campbell's wild mushroom condensed soup (spread it on the rice), sausages and cheese. This is very nice too! 

Sometimes with smoked salmon! Yummy too!
