Raspberry Chocolate Cheesecake
A birthday cake I made in 2013 for my dearest brother! Recording this recipe for my own record.
Love cheesecake with thicker biscuit base so usually I will increase the cookie crumbs proportion. Recipe adapted and altered from "Misstamchiak - Blueberry Cheesecake"
Raspberry Chocolate Cheesecake
Ingredients
180g Oreo cookies crumbs (You can get ready oreo cookie crumbs from Sunlik)
75g Melted butter
500g Cream cheese
120g Castor sugar
2 Eggs
200g Light sour cream
2tbsp Corn flour
1tsp Vanilla extract/paste
1 box Fresh raspberry
Chocolate topping
150g Valrhorna Caraibe 66%
150g Dairy cream
1tbsp rum
Method:
Preheat oven at 170C. Line the base of 7 or 8 inch loose bottom round cake tin.
1. Mix Oreo cookie crumbs and melted butter in a mixing bowl, pour into the cake tin and level it with a spoon. Refrigerate.
2. Beat cream cheese, sugar and vanilla till light and fluffy.
3. Add in egg gradually and beat till smooth.
4. Add sour cream and cornflour, mix well.
5. Pour half of the batter into cake tin, place some raspberries in it and pour in balance batter.
6. Steamed bake in preheated oven for 50 mins.
7. Cool the cake in the tin. Do not remove from the tin.
8. Heat up cream and stir in chocolate till it melted smoothly. Add in rum.
9. Pour chocolate topping over baked cheesecake and decorate it with raspberry and nuts. Refrigerate overnight.
10. Remove cheesecake from tin and best serve chill.
