Homemade rich and hearty Tomato Pasta Sauce!
Recipe adapted from "Chef Eric Low"
Ingredients: (7-8 servings)
100g Hunt's tomato paste
800g Hunt's diced tomatoes (2 canned)
600ml Stock
120ml or more Olive Oil
100g Chopped onion
100g Chopped carrots
100g Chopped celery
10 nos Cherry tomatoes (halves)
2 pieces Bay leaves
1 tsp Mixed herbs
4-5 cloves Chopped garlic
Sea salt and black pepper to taste
Sugar to taste - optional, add a bit if you don't like the sauce to be too acidic.
Some extra virgin olive oil

100g Chopped celery

Sugar to taste - optional, add a bit if you don't like the sauce to be too acidic.
Some extra virgin olive oil
Method:
1. Heat olive oil in a saucepan. Sauté garlic until fragrant and add in chopped onions, carrots, celery, cherry tomatoes, mixed herbs and bay leaves. Sauté until fragrant.
2. Stir in tomato paste and cook for 2 minutes until a bright red colour and oil surface.
3. Pour in canned diced tomato with juice and stock, bring to boil and simmer for 20 mins. Season with salt n pepper, sugar if needed. Drizzle in some extra virgin olive oil. Discard the bay leaves.
4. Cool and pack the tomato sauce into small serving portion. Freeze and use as when needed.
Pasta and brat in homemade tomato sauce, added zucchini and shitake mushroom into the basic tomato sauce! Yummy quick and easy dinner!
