Cook with Tefal ClipsoMinut Duo

You don't need lots of talent and lessons to be a great home cook. All you need are smart, thoughtful tools and a little practice. 


Samgyetang - Korean Ginseng Chicken Soup. This nutritious soup is best consumed during summer. The Korean believes it will replenish the nutrients lost from sweating during hot summer. This soup was pretty easy to whip up and cooking process was shortened by using Tefal ClipsoMinut Duo 2-in-1 pressure cooker. It took me less than 45 mins from preparation to pressured cooked it. 




Recipe reference from Korean Bapsang.
Ingredients:
1 med size kampong chicken
2 nos ginseng (I used dry one, preferably use fresh one, can get from Seng Siong)
3 tbsp glutinous rice (soaked for 1 hour)
6 cloves peeled garlic
4 nos red dates 
1 stalk spring onion (green part - stuffed into chicken, white part - slice for garnishing)
3 slices ginger 
2 tbsp rice wine
1.2-1.5 litre water
Salt and pepper to taste



Method:
1. Wash and clean chicken. Remove excess fat. Wipe dry.
2. Stuff glutinous rice, red dates, garlic, ginger, spring onion (green part) and ginseng into the chicken cavity. Notes: you can stuff rice and garlic only, the rest throw into the pot to boil which I wish to try next time. It may make the soup more flavourful according to the original recipe.   
3. Seal the chicken cavity with toothpicks.


4. Place stuffed chicken into the Tefal ClipsoMinut Duo pressure cooker.
5. Throw in balance ingredients if you did not stuff all. Add water and salt.
6. Cover with the lid, lock and turn to pressure cooker option, start with high heat for 15 mins then lower heat and cook for another 15 mins. 
7. After 30 mins, turn to release pressure option. This pot can be opened easily, add rice wine. Top with chopped green onion to serve. 


Served it with red cut chilli soy sauce (Sg style) or salt pepper with sesame oil dip (Korean Style).


  
You can serve it right from the pot or transfer to a serving bowl or a Korean earthen pot.
