When I saw this recipe over at Happy Home Baking, I knew I will be making it soon. True enough I cooked this few days later. I never try the real sloppy joe before but I do like this one very much with a Japanese twist! For those who like Japanese curry sauce, you will definitely heart this! I cooked the pork version as my aunt don't take beef. This sauce is good for baked pasta too!
Japanese Curry Sloppy Joe Sandwich
Recipe adapted from Happy Home Baking
Ingredients: (Serve 3)
1/2 yellow onion, finely chopped
1 teaspoon minced ginger
2 tablespoons oil
250g minced beef/pork
35g Japanese curry roux (curry block)
100ml water
2 tablespoons ketchup (I used tomato paste)
2 to 3 hamburger/ hotdog buns, spilted, buttered and toasted
2 tomatoes, sliced
1 to 2 Japanese cucumbers, sliced into long thin wedges
Method:
1. Heat oil in a skillet or pan over medium heat. Add onions and ginger and stir fry till lightly browned, about 3-4 mins.
2. Add minced pork/beef and stir fry, breaking up lumps as it cooks, till well browned about 1~2 mins.
3. Add curry block, water and tomato paste/ketchup, stir and cook till the mixture thickens, about 1~2 mins. Remove from heat.
4. Serve it as filling for hamburger/hotdog buns with tomatoes and cucumbers.
Sloppy Joe Baked Pasta
I freezed up the balance sloppy joe and used it as sauce for baked pasta. It went very well with pasta too! It was so yummy! I'm definitely going to make this again and again!
Quite simple to churn this up... Mix sloppy joe with cooked pasta in a baked dish. Spread a thin layer of ready pasta cream sauce (optional) and top with mozzeralla cheese & parsley flakes. Baked till golden brown and serve!
