Mushroom Minced Pork Balls & Vegetables Udon Soup

I love to cook easy meal. Especially recently my aunt only cook once a week. So I will cook my own dinner on weekday as I don't like to buy take out. Quite easy for me to churn up a meal at home anytime because my fridge is always well stock! My aunt will stock up soup stock, sliced fish and seasoned minced pork, individually packed which made it easy for me to thaw and cook! Recently I fall in love with sanuki udon so been cooking it quite often.



Udon soup with minced pork, broccoli and egg! Simple and satisfying meal ready in minutes.


Aunt's mushroom minced pork ball recipe:
Made 6 portions (36 balls)
400g Minced pork
4 pcs dried mushroom (soaked n diced finely)
2 tsp fried & ground flat fish

Seasoning
4 tsp soy sauce
1 tsp sugar
1/2 tsp salt
2 tsp sesame oil
1 tsp wine

1.5 tsp cornflour

Mix all together. Pack into 70g (made 6 balls) per pack n freeze it. Use when need.


Udon soup (Serve 1)
Frozen Sanuki udon 1 pc (blanch in hot water to defroze)
Mushroom minced pork ball 70g
Vegetables of your choice
Aunt's premium soup stock 450ml
1 egg (cook in boiling water for 3-4 mins, soak in cold water to cool it completely before deshelling. This method will give u a soft yolk)

1. Place stock in a pot to boil.
2. Cook meatball, set aside.
3. Add udon n veg. Simmer till veg is cooked.
4. Top with meatballs, egg n onion oil to serve.

Sometimes I added fish too. My comfort food and healthier too than having instant noodles.



With the same concept can make do into an udon hotpot! Everything taste superior with my aunt's premium stock!
