On Christmas Eve, after a simple sukiyaki hot pot dinner at home, I baked another batch of chocolate chips cookies for my uncle & 2 of buddies (Hoon & Hwee) who are coming over to our house for dinner on X'mas Day.
The recipe is quite similar to my previous recipe but I refer to Do What I Like recipe and made some amendment. And it turn out great, it's crispy, not too sweet & very fragrant. Hehe... quite sinful too so much choc chips. Yummy!
Ingredients:
250g Butter (Lurpak)
100g Brown sugar
50g Castor sugar
2 Eggs (lightly beaten)
400g Plain flour
1.25tsp Baking soda
1/2tsp Baking powder (double action)
150-200g Choc chips (Hershey)
100g Walnuts/Pecans (Toasted & chopped)
2tsp Vanilla
1tsp Rum
1/2tsp salt
Method:
Preheat oven 180 degree C
1. Cream butter, sugar, salt, vanilla & rum until creamy & fluffy. Add in eggs slowly till well blended.
2. Add in flour, baking soda/powder, choc chips & walnuts and mix well. (the mixture will be soft but still can be shaped by hand)
3. Scoop/shape mixture into balls onto a greased baking tray. Press cookie down slightly. Top with additional choc chips before baking for about 15-20 mins.
