Recipe from Richard Goh's baking class:
Ingredients:150g Butter
1tbsp Golden syrup
2tbsp Hot water
1.5tsp Baking soda
100g Rolled oat
50g Dessicated coconut
150g Plain flour
130g Sugar (reduce 10-20g if prefer not too sweet)
Method:
Preheat Oven to 160 degree C
1. Boil butter and syrup together until ingredients melt. Leave aside.
2. Stir baking soda into hot water to dissolve.
3. Combined roll oat, coconut, flour and sugar to mix well.
4. Add all wet mixture into the dry ingredients and mix well.
5. Using a spoon, drop the mixtue on a grease baking tray and bake for 15-20mins.
6. Leave cookies to cool before packing into an airtight container.

Cookies look great and healthy. BTW may I know if they crispy or chewy? What is rolled oats? Are they quarker oats?

The cookies are crispy. Yes, I used quarker oat. It's a very easy to make recipe. You can also reduce 10g of dessicated coconut for a healthier cookies.

Sorry I'm not too sure about it. But I know that the golden syrup is needed in this recipe to give the cookie it's crunchiness.
