I have tasted this yummy conflake cookies sometimes ago and been searching around for the recipe. I'm so glad to find one at Precious Moments yesterday. With some left over cornflakes & nuts from CNY bake, I made 1/3 recipe just now. Wow, it's delicious and crunchy except I find it a bit too sweet. Maybe I will reduce the sugar next time. This is a very simple and easy recipe to do. This recipe is definitely a keeper for me.
Recipes from Precious Moments, this is 1/3 portion of the recipe:Ingredients:
110g Cornflakes
60g Butter
25g Sugar
2tsp Honey
30g Almond flakes (toasted)
Method:1. Melt the butter and sugar. (do not stir the sugar when melting as it will clog the sugar, just move the pot to mix)
2. Turn off heat and add in the honey.
3. Pour butter mixture over the cornflakes and almond flakes and mix well.
4. Use hand to tug in the cornflakes into the mini cups.
5. Bake at 150C for 10mins.
6. Watch over closely as it might burnt.

Looks yummy....may i ask if we need to crush the corn flakes before mixing? The butter mixture must be cooled before pouring onto the cornflakes & almonds? Do u think we can substitute the almonds with other nuts?

You don't have to crush the cornflakes nor cool the butter mixture. It will be crunchy after baking. I think you can substitute with any nuts of your choice and I saw some even added raisins.
