Fried Chicken with Sambal

Aunt's homecooking recipe:
Fried Chicken with Sambal

Chicken thigh/boneless leg - 4 nos (aprox 1kg)
Sambal sauce

Chicken seasoning:
(season chicken for at least 45 mins)
Light sauce - 4tso
Oyster sauce - 3tsp
Sugar - 1tsp
Vetsin - 1tsp
Wine - 2tsp
Sesame oil & pepper

Sambal sauce:
Chilli base - 2tbsp
Belachan - 8g
Light sauce - 1tsp
Sugar - 1/2 tsp
Stock - 4tbsp

1. Coat chicken with about 1 tbsp potato starch and deep fried till cooked & golden brown. Set aside.
2. Heat 1 tbsp oil, use low heat to fry sambal mixture till fragrant.
3. Serve fried chicken with sambal.
