Green Tea Sponge Pancake with Durian Ice Cream


Saw Jess & Doris did this sponge pancake to participate in The Spongecake Giveaway hosted by Wendy of Table for 2 or more. I also decided to join in the fun. I did mine on a lazy weekend afternoon. Here's my entry:


Green Tea Sponge Pancake with Durian Ice Cream


I added green tea powder in the batter and serve it with durian ice cream from Scoopz (Parkway Parade B-154).



The pancake recipe looks simple but took some effort in the pan frying. Mine was a bit burnt but tasted pretty nice. The recipe is as follows:


Ingredients:
2 eggs (Separated)
2 tbsp Soft brown sugar
2 tbsp Plain flour (take out 1/2 tsp of flour, replace with green tea powder)
1/2 tsp Green tea powder
1/4 tsp Vanilla
A bit of butter for frying
Durian ice cream
Strawberry (optional for garnishing)

Method:1. Separate the eggs and beat egg whites until frothy and add in sugar and beat until medium stiff peaks.
2. Put in egg yolks and mix.
3. Sift in flour & green tea powder and fold into the eggs.
4. Heat a 9 inch non-stick pan on medium fire and put in 1/2 tsp butter. Swirl it around to coat and pour the excess into batter.
5. Lightly fold the batter to incorporate.
6. Turn heat to medium low and pour in all the batter.
7. Cover with lid and cook until sides look golden, and center of pancake is almost cooked.
8. Flip into half or flip onto plate and serve with ice cream and decorated with slice strawberry.

Mine was a thick sponge pancake with mild green tea flavour and went very well with the yummy durian ice cream.



Simple delicious dessert. Very versatile and suitable to serve anytime of the day!



Easily wipe up the whole pancake within minutes. Yummilicous!

Agree with J3ss, your spongecake looks perfect! I can see the pancake really spongy. You are really good in frying, as I didn't dare to fry in thick batter .... heehee ... Additional durian ice-cream on top of the pancake, really make me craving for it :p

Hi Doris,

Haha... I have a hard time flipping and guessing whether was it cooked not. Anyway the next time I will like to try doing one egg per pancake. I think will be more manageable.
