Attended a very interesting bread's workshop by Valerie. I simply love her workshops, there's always new things to learn from her. That's explain why her classes are always full at The Serangoon CC. The bread was done using the Yukone method (Gelatinized starch / 烫种). This method is very common to many but I have never try doing it myself. I love it as it produces very soft bread. She demonstrated 3 varieties of bread and all are very nice! The Cranberry Cream Cheese bread is almost similar to the popular bakery shop at Hong Lim - Barcook Bakery. However my favourite goes to the traditional cheddar cheese & sugar bun. Recently I tried making it and all turn out pretty well.

Hi Jess, try once and you will definitely get use to attending alone. Most the classes I went alone too. Trust me it's worth attending and I'm sure you will enjoy it!
I love the soft dimsum bread...that one with sugar and cheese would be my favourite.
Hi Angie, it's my fav too!
the ayam tuna bun looks so soft, like those store-bought. I love Valerie's class too. I want to attend this too! Thanks for sharing Wen!
Hi Jessie,
I'm sure you will like this bread class. I think she is one of the best instructor in PA.
I heard about her class quite popular, never got chance to join her, because I always last minute to know and the class allways full house. LOL.
I hope by next year, I can find some time to attend her class.
Hi DG,
You are right! Usually have to register fast once you received her schedule update email.
Hi Edith,
Me too has not been attending as often as I used to be. Hope she will come up with more new creations next year.
Hi Wen
Did you use a stand mixer to do the dough or follow Val's hand held method?
Will try it soon too....
^ ^
Hi Anonymous, I used my Kenwood Chef to do the dough. Too lazy to use the hand held method...lol!
Hi! Wendy, Thanks for your recommendation, it was a great class which was worth attending. For those who had missed, please look out for her upcoming class at the CSC. Will try to squeeze out sometime during the weekend to try out baking the bread. Still undecisive whether to use my kitchen aid or my hand held mixer for kneading the dough.
