Valerie's Japanese Swiss Rolls Workshop

Valeries's Coffee & Chocolate Chiffon Cakes Workshop

I cannot believe it this was the first baking workshop I attended this year. What have I been doing...lol? Anyway attended another Valerie's workshop at Serangoon CC recently. Both chiffons are nice but the chocolate chiffon  is more crowd pleasing!

Valerie's Christmas Cookies Workshop


The next Christmas workshop I attended was Valerie's Christmas Cookie at The Serangoon CC on 9/12/10. I attended on behalf of K as she was not free on the day. Quite interesting cookie workshop. A butter cookie and gingerbread cookie recipes were taught and we get to decorate it on our own. I wish I have time to bake it for X'mas but just too tie down with so many chores that I have to give it a miss till next year. I liked both cookies, very fragrant and crisp!

Valerie's Sweet Bread Workshop

Attended a very interesting bread's workshop by Valerie. I simply love her workshops, there's always new things to learn from her. That's explain why her classes are always full at The Serangoon CC. The bread was done using the Yukone method (Gelatinized starch / 烫种). This method is very common to many but I have never try doing it myself. I love it as it produces very soft bread. She demonstrated 3 varieties of bread and all are very nice! The Cranberry Cream Cheese bread is almost similar to the popular bakery shop at Hong Lim - Barcook Bakery. However my favourite goes to the traditional cheddar cheese & sugar bun. Recently I tried making it and all turn out pretty well.

Valerie's Teriyaki Chicken Burger Workshop


As my hectic work schedule coming to an end soon and leaving me with more free time. I started to do some baking and attending workshops again. Attended this workshop on 29 Jul at Serangoon CC. A demo on wholemeal burger bun with Teriyaki chicken by Valerie, my favourite baking instructor from the CC. Love this recipe very much and will be trying it out at home soon.

Serve it like how the Mos burger does it with iceberg lettuce and Japanese mayo. Yum...!

Valerie's Chocolate Fondant Workshop

Attended another Valerie's workshop at The Serangoon CC. Chocolate fondant cake - a very rich chocolate cake where the lava was created by custard. Pink almond heart cookies - perfect Valentine's bakes.

Valerie's Tofu Cheesecake Workshop

29th Apr 2010

Attended this workshop at The Serangoon CC by Valerie. Two non baked desserts - A Japanese style light cheesecake using silken tofu and mango pudding with dried mango added. The tofu cheesecake texture was almost similar to the one served at Sun with Moon Japanese Dining but Val's version of the biscuit base was not as crisp.

Valerie's Pau Workshop

18th Apr 2010


Attended Valerie's Pau workshop at Siglap CC on a Sunday afternoon. Interesting class. Before the class never thought that making pau can be that simple but after the class I actually felt like trying out. It's actually quite simple and the steam bun skin tasted really nice especially the vegetables pau. Though the wrapping still need lots of practice to master but who's care if we are making it at home for family as long as it taste good, they will still enjoy.

Valerie's Almond Cookies Workshop



Attended another CNY baked treats workshop by Valerie's at The Serangoon CC on 21/1/10. Two types of very easy to make and nice Almond cookies were demostrated. Naturally I will list these cookies in my CNY to bake list since it were easy recipes. Yes, my list is out and as usual I'm always very ambitious...haha hope I can finish baking all of them.

Valerie's X'mas Logcake Workshop

This was a much looking forward class - Christmas Log Cakes by Valerie's at Safra Tampines. 2 types of log cakes were demonstrated. Both using the same type of flourless chocolate roll which was supposed to be flourless traditionally according to Valerie.

Flourless Almond Chocolate roll filled with Kirsh soaked cherries and cream. This is very good and I prefer this than the chocolate logcake. Hoping to try this out for X'mas if I'm free.

Flourless chocolate roll with rum raisin, choc crunch and thick chocolate ganache. This is a very rich and sweet chocolate cake, not my cup of tea. Probably the chocolate lover and those with real sweet tooth will like it.

Valerie's Chantilly Cake Workshop @ 29.10.09

Attended this workshop with my colleague - A at The Serangoon CC. I'm trying to encourage her to attend baking workshop with me because she seem to be interested in baking and been trying out recipes from the Internet but most of the time the bake didn't turn out well. So I hope after she attended this class at least she can have some idea of making a basic sponge cake.

This chantilly cake recipe was created by Valerie after she tasted it at Ristorante Da Valentino - Perla's Pastry Boutique, whereby Chantilly cake is their specialty and best selling cake. Refer to Indulgence after workout for more details on this cake. According to Valerie, her version is almost similar to the one that they are selling. Wow, now we can make our own Chantilly Cake! I haven't tasted the one at Perla's so no comment but according to the review I read, it's sound alike.

Valerie's Chantilly Cake

This cake was very soft and light almost like melt in the mouth with very creamy white chocolate custard cream infused with rum liquor. Yummy!

Chantilly Dessert
A simple dessert to whip up using balance chantilly cream, sponge finger biscuit and berries. Almost similar concept to making tiramisu but using rum syrup instead of coffee. I like this very much, easy to make and looks so appealing.

Valerie's Cookies Workshop @ 22.10.09

Baking cookies used to be one of my favourite hobbies when I'm not so into baking cakes. I love to collect good chocolate chips cookie recipe though I do have some nice recipes but still hoping for better ones that are super crunchy and rich flavor like Famous Amos cookies. So I was overjoyed when I knew that Valerie will be having cookie class in October at The Serangoon CC. Her classes are very popular and always full so I was lucky to register early for it.



The chocolate chip & pecan cookies are addictively yummy and almost 80% tasted liked Famous Amos but was a bit sweet for me. Going to try baking them at home this weekend.




This was a chewy cookies w/white chocolate chips, raisin, cranberries & oatmeal. It was not bad but I still prefer cookies to be crunchy instead.

Valerie's Pizza Workshop

15th Oct 09

Attended a pizza workshop last Thur at The Serangoon CC by Valerie. I liked both flavour and the thin crust though it's not easy to get it crispy with our normal conventional oven. I had tried making it at home over the weekend and my family love it especially the BBQ chicken filling was really good.



A Very nice combination of vegetables which include asparagus, eggplant & fresh button mushroom.




The BBQ chicken was very tasty!

Closed Pineapple Tarts & Kueh Makmur Workshop

Back to The Serangoon CC again the following week to attend Valerie's Closed Pineapple Tarts & Kueh Makmur workshop on 10th Sep 09. This recipe is even more melt in the mouth than the open tarts and taste even nicer. However, too much work unless we just shape it into balls instead of using the tweezer to pinch out a rose. As for the kueh makmur, it's the same pastry as the tarts but different fillings.

Valerie's Open Pineapple Tarts Workshop

Attended Valerie's Open Pineapple Tarts Workshop at The Serangoon CC on 3rd Sep 2009. An interesting class with some hand-on experience.

Usually, I will use my aunt's recipe during CNY but I was just curious how's Valerie's version fared as her recipes are usually good so registered for both her open & close pineapple tarts class. I was not disappointed, the tarts tasted great and really was those melted in the mouth types. And, the pineapple was freshly made too. Maybe going to try her recipe for the coming CNY...

Valerie's Baking Class on 19th Aug 09

Attended Valarie's baking class last Wednesday at Carnhill CC. Heard from Karen, a friend I got to know from attending baking classes. She told me that Valarie's strawberry shortcake was good so decided to take a day leave to attend as the class was on a working day.

2 cakes were taught (only demo):

1) Strawberry Shortcake
Very light and fluffy sponge cake with kirsch whipping cream. Simple and delicious. Going to make this cake soon.





2) Coffee Walnut Cake
Also a sponge cake, used very little flour so is a very light and nutty cake. Quite nice but still prefer the strawberry cake.

Sugee Workshop By Valarie Kong At Safra

Saturday - 10th January 2009

Sugee is my favourite cookies and I will always get a tin from Bengawan every year during CNY. I was so happy when I knew that Valarie Kong will be teaching it. I attended this workshop last Saturday at Toa Payoh Safra. I was surprised that actually sugee is one of the easiest cookies to make as compared to the rest. I'm glad that I can make my own sugee this year. Another cookies added to my CNY baking and I will bake it this weekend.

Durian Swissroll & Creampuff Workshop By Valarie Kong

Sunday afternoon, I was at Tampines SAFRA attending Valarie Kong - Durian Swissroll & Creampuff Workshop. I attended her carrot cake workshop at PA before and since then I was on her mailing list where I will get updates on her classes. This was my 2nd time attending her workshop, well she is very detailed and highlighted all the important points to take note of when doing the swissroll & puffs.

What impressed me of her teaching was, she proved to me that even you do not have a Kenwood or kitchenaid or a conventional oven, you can still do wonder with only a handheld cake mixer and a table top oven.

Well, she let us have some hand on too, like scooping the puff, rolling the cake and filling the durian into the puff. Overall was a delightful experience and my goodness the puff & swissroll were unbelievably good!
