Zucchini with Capsicum, Shimeji Mushroom & Prawns


Zucchini - a smooth cylindrical usually dark green/yellow summer squash which is very common in the Western countries has started to get popular in Singapore too. You can easily get them in the wet markets and supermarkets. We love it very much and Aunt almost cooked this vegetables dish every other week. Sometimes I like to add some in my kimchi soup too. We had this again last night so this was how my Aunt cooked it. Very simple stir fry dish but just remember not to overcook the zucchini.



Aunt's Homecooking Recipe:
Zucchini with Capsicum, Shimeji Mushroom & Prawns


Ingredients:
Green Zucchini - 1 no (if small size 2 nos)
Yellow Zucchini or Yellow Capsicum - 1/2 no
Red Capsicum - 1/2 no
Shimeji Mushroom - 1 box
Prawns - 8 nos
Garlic - 1 clove (chopped finely)

Seasoning Sauce:
3 tbsp Stock
1/2 tsp Sugar
1 tsp Light Sauce
1 tsp Fish Sauce
1 tsp Oyster Sauce
1 tsp Sesame Oil
1 tsp Huatiao Wine
1/2 tsp Cornflour
Pepper




Method:
1. Cut zucchini, capsicum & prawns into cubes.
2. Heat 2tbsp of olive oil to fry garlic till fragrant. Add prawns to fry for 1/2 mins, then add in the rest of the vegetables and stir fry for awhile.
3. Add in the seasoning sauce and stir fry for another min till the sauce heat through.
4. Dish out and serve.
