Pandan Durian Chiffon Cake


Another durian bake, will be submitting this to Aspiring Bakers #5: Fruity March (March 2011) hosted by Jess from Bakericious.


Pandan Durian Chiffon Cake



Recipe adapted and modified from Banana Chiffon by Junko Fukuda
Ingredients:
80g Durian flesh (blended)
3 nos Egg yolks
50g Castor sugar
50ml Sunflower oil (any vegetable oil)
80g Top flour
1/4 tsp Baking powder
1/2 tsp Pandan paste

4 nos Egg whites
20g Castor Sugar




Method:
Preheat oven at 180 deg C. Chiffon mould - 17 cm
1. Place egg yolks, sugar & oil in a mixing bowl. Whisk till well blended, add in durian & pandan paste to mix well. Fold in sifted flour & baking powder, set aside.
2. Whisk egg white & sugar at max speed till stiff peak.
3. Fold in 1/3 egg yolk mixture into whisked egg white, then pour this mixture into the the balance egg white, fold till well incorporated.
4. Pour batter into chiffon mould and bake for 30 mins.
5. When baked, turn upside down to cool. Unmould when completely cool.





There's still durian flesh in my freezer so what should I bake next? Any recipes to recommend? Oh saw this Durian Cheesecake over at Bakericious, haha... my next target set!

looks really nice! now you got me thinking that i should store durian flesh in my freezer as well when the season is here. i want to bake durian too! but never see any nice durians nowadays -.-

wen! i was sooo tempted! where did you bought the durian flesh from? im sure is the super good quality ones! i want to try out all of it! the combination of pandan and durian in this chiffon cake is so special! (: (: it must have tasted YUMMY!!

Hi Jean & Jasmine, I always buy durian from a regular supplier at Toa Payoh Central Blk 183 #01-306. They do delivery too. The stall has a branch at Geylang Lor 36 too. Stall name is Fruit Top 1, HP:98894906 (Ah Yi). Those durian that I used in my cakes are deseeded sold in 2 kg per pack at S$20. Quality very good and fresh.

Very unusual combination, did the cake taste like durian, but smell like pandan ?... hahaha ... I just curious, cause what I know that everytime I saw people (in Indonesia) carrying durian thru the airport check-in (for domestic flight), they will put lots of pandan leaves surronding the durian box, to get rid of the smell.

Wen, your cake as usual always perfectly baked. I have never bake durian cake before, just wondering do the taste still remain, or similar to no bake durian cake. Thanks in advance.

Hi Doris, for this chiffon the durian taste is quite noticable with mild pandan fragrant because I only added 1/2 tsp paste. If you want more durian flavour just omit the pandan paste.

Mine was about $10 per kg usually in 2 kg pack. The quality was pretty good. Usually when my family ordered durian then I will order a pack of the flesh so I'm not sure will they deliver for just that. Maybe you have to call and check.
