Easter April 2011 $20 Budget Meal - Healthy & Nutritious Dinner

Submitting this dinner menu to Ellena of Cuisine Paradise who is hosting the [Easter April 2011 $20 Budget Meal] using "EGG" as one of the main ingredient in either one of the two dishes or soup prepared. Let's me take you through my healthy and nutritious dinner menu that cost less than S$20 to serve 4...

Steamed Fried Fish with Miso Sauce - S$6.70
Stir Fry Marrow Green and Egg with Crispy Silver Fish - S$2.80
Radish & Pork Ribs Soup - S$9.00 


Steamed Fried Fish with Miso Sauce


Recipe - Steamed Fried Fish w/Miso Sauce (S$6.70)
Ingredients:
3 Rabbit/Zebra/Spotted fish (Big - 3, small one around 6) - $6.00
(season w/light sauce & pepper for 20mins)
Ginger (Shredded & fried till golden) - $0.20
Spring onion & Chilli (shredded for garnishing) - $0.50

Seasoning:
150ml stock/water
2 tsp miso paste
1/2 tsp vetsin (optional add when using water instead of stock)
1/2 tsp sugar
1 tsp sesame oil
1 tsp wine
Pepper

Method:
1. Lightly pan fried fish till golden on a non stick pan.
2. Place fried fish nicely on the plate.
3. Pour in miso sauce & steam for 3 mins.
4. Add in fried ginger, spring onion & chilli and cover for 1 mins before serving.


Stir Fry Marrow Green with Crispy Silver Fish


Recipe - Stir fry marrow green & egg with crispy Silver Fish (S$2.80)
Ingredients:
1 Marrow green (peel of the skin and cut into thick strips) - $1.20
50g White bait/dried shrimp (Rinse & fried till crispy for topping) - $1.00
2 clove Garlic (Chopped finely) - $0.10
2 Egg (beaten) - $0.50

Seasoning:
3 tbsp stock/water
1/2 tsp salt
1/4 tsp vetsin (optional add when using water instead of stock)
1/4 tsp sugar
1 tsp sesame oil
1 tsp wine
Thickening - 1 tsp cornflour mix w/1 tbsp water

Method:
1. Heat olive oil to fry chop garlic till fragrant.
2. Add in the vegetables, stir well till almost cook.
3. Add in premix sauce and stir well.
4. Stir in beaten egg and mix well.
5. Add in thickening & dish out.
6. Top with crispy silver fish to serve.
 

Radish & Pork Ribs Soup


Radish & Pork Ribs Soup (S$9.00)
Ingredients:
500g Pork ribs - $6.50
1 small White radish - $0.80
1 small Green radish - $0.70
2 nos Dried scallop - $1.00
