
Ingredients:
Plain flour 255g
Salt 5g
Baking soda 5g
Unsalted butter 150g
Brown sugar 100g
Sugar 55g
Corn syrup 3 1/4 tbsp
Milk 2tbsp
Vanilla essense 3/4tbsp
Bittersweet chocolate chips 200g
Pistachio nuts 100g (shelled & chopped)
Dried cranberries 85g (chopped)
Method:
Preheat oven 180 deg C
1. Sift flour, salt & baking soda into a mixing bowl. Set aside.
2. Place butter and sugar in another mixing bowl and whisk unitl light and fluffy. Add corn syrup, milk and vanilla essense and whisk until well blended.
3. Add flour mixture and mix on low speed until smooth. Add chocolate chips, pistachio nuts and dried cranberries.
4. Place mixture on a floured work surface and knead to form a dough. Divide dough into 1 inch balls and flatten into discs.
5. Arrange on a lined baking tray about 2.5cm apart and bake for 15-20mins until light golden brown. Set aside to cool and store in an airtight container.
