Old Fashioned Butter Cake

Nothing more satisfying and comforting than a slice of good old fashioned butter cake with a cup of tea! A simple and easy butter cake recipe adapted from Sonia @ Nasi Lemak Lover.



Moist and buttery... Just nice to use up my can of Golden Churn butter.


Old Fashioned Butter Cake
Recipe adapted from Nasi Lemak Lover
Ingredients:
250g Butter (chilled)
100g Castor sugar
5 Egg yolks
230g Cake flour
1tsp Double action baking powder
4tbsp Milk
1/2tsp Vanilla essence

5 Egg whites
90g Sugar




Method:
Preheat oven at 170 deg C, line a large loaf tin or a 8" square tin
1. Cream butter, sugar and vanilla in a mixing bowl until light and creamy. (using medium speed)
2. Add the egg yolks, one at a time, beating well after each addition. Add the flour and baking powder and beat well to combine. Fold in the milk and combine well.
3. Whisk egg whites in a clean large bowl until soft foam. Gradually add in sugar, and beat till soft peak.
4. Take one portion of the egg white mixture, and use a hand whisk to stir well with egg yolk mixture till combine and thick paste.
5. Slowly fold in the balance egg white with a spatula till well combine.
6. Pour the batter into the cake pan and bake for 55 mins or untill cooked.

You are right, nothing beats an old fashioned butter cake.  This crumb looks great.

The egg I used weigh about 60g each with shell.

Hi, I'm using Firenzzi 60L oven, the temperament of the oven is very hot, i bake my butter cake at 125deg C( recipe yield for 145deg C), I'd like to know if bake this cake using the same cake pan(i owned one exactly like the one in the pic), how many degree C should I use and how long should I bake? Tq

Hi Asther,

Maybe you can try 150C for 45 min. Bur you have to monitor every 15 min, if the top turn brown too quickly, lower the temp.
