Angel Biscuits

This recipe was so interesting that I made it the next day when I saw it at Happy Flour. Thanks Happy Flour for sharing such a great recipe. The biscuit looks like a scone but was so much softer and fluffier than a scone. It's in between a bread & scone, tasted very flavourful too! Yummy!





Recipe from Fresh with Anna Olson- Retro 50's Meal (season 2) adapted from Happy Flour

Ingredients:(make 8 biscuits)
2g instant dry yeast
30g sugar
1tbsp warm water (body temperature)
190g plain flour
1/4tsp baking soda
1/4tsp baking powder
1/4tsp salt
60g cold unsalted butter, cut into pieces
120g buttermilk




Methods:1. Stir yeast, a pinch of the sugar and water together and set aside while preparing other ingredients.
2. Sift flour, remaining sugar, baking soda, baking powder and salt into a large bowl.
3. Cut the butter into the flour until it’s a rough crumbly texture.
4. Stir the yeast mixture into the buttermilk and add it all to the flour.
5. Mix until a sticky dough comes together, wrap and chill overnight.
6. The next day, preheat oven to 220C.
7. On a generously floured surface (dough will be sticky), roll out dough to 1cm thick and fold dough over in half, pressing down gently.
8. Using a 5 cm round cutter, cut out biscuits and place on a lined tray.
9. Bake 10-12mins, until just lightly browned.
10.Remove from tray and cool it on a wire rack.
11.Serve biscuits warm or freeze and re-warm to serve later.

Buttermilk Scones

Recipe adapted from "Do What I Like". Very fluffy and light, taste good too. But, I didn't get the tall look, maybe I didn't roll to 2 cm thick that why I manage to get about 10 pcs of scones. Spread some butter and jam, really yummy!

Cranberry & Cheese Scone

Some days ago, my colleague Sharon asked me whether can I made some scones for her. I never make any before but I remember I have a scone's recipe from Richard Goh's baking class. So I gave it a try yesterday. Though it's a rather simple recipe but my scone didn't rise well. I think my self raising flour was not working well, probably kept on the self for too long.



Ingredients: (make about 30 nos)
250g Butter
30g Sugar
1 Egg
500g Self raising flour
200g Milk
1/2tsp Salt
50g Cheddar cheese
50g Cranberry

Method:
1. Cream butter & sugar at slow speed until just blended. Add in egg and mix well.
2. At slow speed, add in self raising flour, salt, cheese & cranberry. Pour in milk.
3. Knead to form a dough and let it rest for 20 min.
4. Roll out the dough to about 1 inch thick. Flour a round cutter (1.5" dia) to cut out the dough.
5. Place the scones on a lined baking tray and brush the top with milk.
6. Bake the scones at 200 degree C for about 20 mins or until golden brown.
