Ham and Cheese Buttermilk Waffles


My first attempt on waffle using Happy Call waffle pan! Recipe adapted from @ig_honeybeesweets instagram!  



Love the lightly crisp and fluffy texture and deliciously sweet and savory flavour!

Weekend Breakfast III - Homemade Fluffy Pancake

I used to make pancake from pre-mix pack but since I started making it on my own years ago, I never go back to premix anymore as it's really simple to whip up. Whenever I make pancake for weekend breakfast, my doggies will be overjoyed because they get to share some of it...lol!



Nice and fluffy pancake over a cup of Nespresso! A wonderful weekend breakfast!

Green Tea Sponge Pancake with Durian Ice Cream


Saw Jess & Doris did this sponge pancake to participate in The Spongecake Giveaway hosted by Wendy of Table for 2 or more. I also decided to join in the fun. I did mine on a lazy weekend afternoon. Here's my entry:


Green Tea Sponge Pancake with Durian Ice Cream


I added green tea powder in the batter and serve it with durian ice cream from Scoopz (Parkway Parade B-154).



The pancake recipe looks simple but took some effort in the pan frying. Mine was a bit burnt but tasted pretty nice. The recipe is as follows:


Ingredients:
2 eggs (Separated)
2 tbsp Soft brown sugar
2 tbsp Plain flour (take out 1/2 tsp of flour, replace with green tea powder)
1/2 tsp Green tea powder
1/4 tsp Vanilla
A bit of butter for frying
Durian ice cream
Strawberry (optional for garnishing)

Method:1. Separate the eggs and beat egg whites until frothy and add in sugar and beat until medium stiff peaks.
2. Put in egg yolks and mix.
3. Sift in flour & green tea powder and fold into the eggs.
4. Heat a 9 inch non-stick pan on medium fire and put in 1/2 tsp butter. Swirl it around to coat and pour the excess into batter.
5. Lightly fold the batter to incorporate.
6. Turn heat to medium low and pour in all the batter.
7. Cover with lid and cook until sides look golden, and center of pancake is almost cooked.
8. Flip into half or flip onto plate and serve with ice cream and decorated with slice strawberry.

Mine was a thick sponge pancake with mild green tea flavour and went very well with the yummy durian ice cream.



Simple delicious dessert. Very versatile and suitable to serve anytime of the day!



Easily wipe up the whole pancake within minutes. Yummilicous!

Light & Fluffy Buttermilk Pancakes

Made my own pancake this morning for breakfast. I'm surprised and delighted with the pancakes texture, it's so fluffy & tasty as good as Mcdonald's. And, it's so easy & simple to make. Everybody can whip up a fantastic pancake!

Buttermilk is the secret ingredient that contributes to it's fluffiness. There are various pancake recipes from the net and even from the buttermilk box itself contain a recipe. However, I used the recipe from Florence of Do What I like as she has converted the recipe to self-raising flour and to grams, so easy to follow. I always prefer recipe with grams than cups. She's my source of inspiration and her recipes always worked.




Buttermilk Pancake:
Ingredients:

(I did half a recipe, yields about 10 pancakes)
120g Self-raising flour
1/8tsp Baking soda
1/8tsp Salt
25g Castor Sugar
187g Buttermilk
1 egg Lightly beaten
2tbsp Corn oil
1/4tsp Vanilla essence
Optional: 1/2 tsp orange zest (I omitted as I'm too lazy to grind)

Method:
1. Sieve four & baking soda into a large bowl, mix in the other dry ingredients.
2. Mix the egg, buttermilk and oil together.
3. Mix the wet & dry ingredients together with a handwhisk till batter is smooth.
4. Cook in a hot non-stick and lightly-greased pan till golden.
5. Serve with maple syrup/honey & butter.
