It's TGIF! I was supposed to go Orchard to do my X'mas shopping and was held up by the massive traffic jam at Thomson area. In the end I decided to alight at Novena Sq instead. I made the banana cake yesterday. As I am using Kenwood major, I try not to overwhisk. I whisk the egg ang sugar mixture for about 5 mins.
My cake turn out not as crumbly as before. But I still cannot get the fine texture like yours. My cake turn out to be wet too. Did you weigh the oil with scale or measuring cup.

I weigh the oil. What type of banana you used? Usually I used those from Philiphines instead of the local ones. Or the cake was underbaked...

I use local banana for this cake. I think it is causing the moisture.
I will try again with Philiphines banana.
