Asahikawa Miso Ramen


Sharing a quick and easy weekend meal idea!


Asahikawa Miso Ramen! Soup base was rich and tasty, noodle texture was smooth with good bite! Served with Japanese ramen char siew, ramen egg, cooked scallops, spinach and spring onion! A yummy bowl sumptuous ramen!

I love sandwiches of any types! I can eat them any time of the day as a meal or as snack! Especially on weekends, I love to make sandwiches for a simple lunch.

Aspiring Bakers #4 - Love Pocket Bread (Feb 2011)


Make a simple love pocket bread for your love one for breakfast or pack it in their lunch box... I'm sure they will be touched and will feel the love is in the air while munching on the bread that fill with delicious potato salad.

This is my entry for this month - Aspiring Bakers #4: Love in the air (Feb 2011) hosted by Ellena of Cuisine Paradise.




Love pocket bread - recipe adapted from my colleague Sandra who once made this for our X'mas Potluck Gathering.


Ingredients:
Fillings
1 no potatoes (cooked & mashed)
1 no hard boiled egg (chopped)
1 slice of ham (chopped)
1/2 no tomato (deseed & chopped)
1/2 no Japanese cucumber (deseed & chopped)
2-3 tbsp Kraft coleslaw dressing
Pinch of salt & pepper to taste
**this portion is enough to make 5-6 pocket bread, about a loaf of bread



Mix all the ingredients for the potato salad together into a smooth paste as shown in the picture.


Use a heart shape small cake tin to outline the bread, spread the potato salad within the outline. Top with another slice of bread and press out the love pocket. It will seal nicely.


Very simple...right! Hope you enjoy it!


Alternatively, you can serve it this way. Top the toasted bread with potato salad. Equally yummy!

Bak Kwa & Egg Sandwich


This is my recent craze...haha! Recently my house always stocked with Lim Chee Guan's BBQ Bak Kwa. Why is it so? Because is Aunt's favourite so my brother always buy some for her whenever he dropped by. I always see my colleage used it as sandwich filling so I gave it a try too and I fall in love with it since then. Believe me is very yummy and a satisfying breakfast for me.




Bak Kwa and egg omelette top with some Japanese mayo with 2 slices of soft white bread.

Golden Curry Baked Rice


I love to keep some of this convenient pack of Japanese curry & CJ coooked rice at home. For days where Aunt not cooking and when the craving for it comes I can use it. To make a more sumptuous meal, I used the sauce to bake rice. This was an easy and delicious meal I prepared for myself on a weekday evening using all these convenient stuff. I enjoyed it very much! Cheesy and flavourful...









1. Place the CJ cooked rice into a bake dish
2. Spread out a pack of Golden Curry Sauce onto the rice
3. Microwave for 2 mins
4. Top with some cooked sausages/Fried CP chicken crispy
5. Sprinkle generously with pizza plus cheese
6. Bake at high heat till the cheese melted an turn golden brown
7. Drizzle some chilli sauce and serve it warm. Enjoy...

Mushroom & Chicken Gratin


Trying to replicate Tao's bacon & mushroom gratin by using Campbell's soup. Almost get it but a bit more salty. Anyway this is a quick snack to make. Serve it with toast bread for a complete meal.





Spread a thin layer of the concentrated soup onto a bake dish, top with cheese and bake at 180 deg c till golden brown. Serve with toasted bread.

My Easy Meal - Jan to Feb 10

After all the preparation and feasting, CNY is finally over yesterday. Hope every one of you have enjoyed it. For me, I rounded of my CNY celebration with a short trip to Genting Highland over the weekend. It's a tiring trip but quite enjoyable. This 2 months been over eating! Oh mine my CNY resolution is to go on diet... this seem to be my resolution annually hahaha! I think lots of people make this wish too especially after every festive. My the other resolution is to keep my blog up to date like it used to be. Over the last few months, I have been rather slow in my updates and now I exactly one month behind. Hope I will be able to catch up soon.

Roast Chicken with Vegetables




Aunt's favourite, specially made this for her.


Korean Rice Cake Soup




Had some balance Korean rice cake, cooked it in chicken stock with dried shrimps, pork, chinese cabbage & egg like "mi hoon kueh". Surprisingly quite nice!


Prata Egg Rolls

This is an easy and nice snack to make. Got this idea from Happy Home Baking.

Sunday lunch at home

Started with Smoked Duck Salad, followed by Tuna & Cheese Focaccia Bread and a simple dessert of Yami Yogurt. That's what I prepared for my family Sunday's lunch. Simple, nutritious and very delicious!

Smoked Duck Salad

Slice smoked duck, butterhead lettuce, cherry tomatoes and assorted chopped peppers with a mixture of Kewpie Wafu dressing & Mizkan Kin Goma Tare dipping sauce. A mixture of equal portion of these dressing works wonder. Taste really marvellous with the salad and smoke duck.

Duck Chef Black Pepper Smoked Duck Breast

In case you are wondering where I get my smoked duck? Of course I don't know how to make it...haha! It's another one of my great find from the supermarket. Vacuum packed with no preservatives and ready to eat. This is great for salad and sandwiches. The duck breast was very tender and bursting with mild black pepper flavor. Very yummy!

Tuna & Cheese Focaccia Bread

Bought ready focaccia bread from Gardenia with Tuna mayo (Tuna, chopped onion, capers, mayo, mustard & pepper), cheese and lettuce. Almost tasted like a sandwich from Subway. Very satisfying!

Yami Yogurt

Nearly forgotten that I had a box of Yami yogurt in my freezer... so trying to finish up before it expired. By now, all my darlings already crowding around us begging for yogurt! Lol!

Nice Pasta Sauce by House

Recently I bought 2 packs of instant pasta sauce by House (products of Japan) and was quite surprise that it tasted so good. It was so convenient for those who don't know how to cook and wanted some quick & easy meal at home. Just have to stir in some cooked pasta into the sauce and heat it through. You will be able to enjoy a nice meal in less than 15 mins. I tried the cream and bolognese sauce, both were nice. Definitely going to stock up a few packs if I happen to pass by Japanese supermarket.





The cream sauce was very tasty with acceptable creaminess and there's bits of ham in the sauce. You can by all means add some bacon in. I just spinkled some ready bacon bits and parmesan cheese on top.

This was even more yummy than the cream sauce. I added some sauteed sausages to cook it with the pasta and sauce. When it's done, top with some pizza plus cheese and baked for a few mins till the cheese melted and brown. Serve immediately. It was so good and I finished every bits of it.

Easy Crispy Puff w/Pork Mushroom Pate

My Sunday morning breakfast - Easy Crispy Puff w/Pork Mushroom Pate. This is an very easy snack to make anytime of the day using instant frozen prata as the pastry and just fill it with tuna, sardine, salmon or anything of your choice. This morning I happen to have a canned of pork pate to use it as the filling. You be surprised at how easy and tasty this prata can be by baking it this way.


Ingredients:
Frozen Prata
Filling of your choice
Method:
1. Remove 1 side of the wrapper and let it stand for awhile to soften.
2. Spread the filling onto half side of the frozen prata.
3. Fold the prata into half and seal by pressing harder at the round edge.
4. Freeze it again to remove the wrapper smoothly.
5. Bake at 180C w/fan for 10-15min or till puff up & golden brown.
(Can use toaster to bake too.)

Home-made Dumplings

This was given to me by my China's colleague. They are really good at making dumplings. She will always made a lot and distribute to few of us for CNY. This year I took 30 pcs from her.

For the past 2 years, I been the fortunate one to enjoy her home-made dumplings. Usually, she will deep freeze it and we can cook it whatever ways we like at home. Sometimes, I will either deep fry or just boil it and dip with vinegar and chili sauce. Super yummy. I tried to get recipe from her but she always say no recipe just estimation and feel. So be it, maybe is her family secret recipe that cannot be shared. Then I shall continue be blessed by her and I also don't think I have the patience to do it too...


This was my Friday's night dinner. I took 10 pcs in one go and I think I still can eat somemore, it's really very nice...

Smoked Salmon Sandwich w/Red Skin Potato Salad

Thursday - 29th January 2009
I'm still on CNY holidays as I only need to start work on Monday. So today lunch was prepared by me again. I made a Red skin potatoes salad and a simple smoke salmon sandwich to go with.

I used canned smoked salmon, mix it with some chopped onion, dill & mayo spread it on toasted bread. Yummy. As for the potatoes salad was from Chef Yong's workshop so not convenient to review the recipe. Basically is a mixture of boiled red skin potatoes, green pepper, chopped onion, gherkins, sausages, spring onion, mayo & mustard. I like this salad very much even though I usually don't like potatoes and this was my 4th times making it.

An easy meal prepared by me on one of the weekday's dinner last week. A stew mee pok w/home made XO sauce served with blanched prawn, kailan & bean sprouts. This was learnt from Chef Yong's workshop. Deliciously simple...

Singapore Laksa (Prima Ready-to-cook meal kit)

With so many ready to use paste and premix available in the supermarkets, even you don't know how to cook also can cook up quite a decent meal using all these easy to use paste. One of my favourite ready mix is Laksa from Prima Taste. Easy to cook and taste fantastic even my aunt who is a gourmet also give a thumb up for this when I cooked for her today.

Laksa, one of Singapore favourite local delight.

The ready-to-cook meal kit include the laksa paste, coconut powder, sambal chilli & dried laksa leave. All you need is to add all the fresh stuff like rice vermicelli, beansprout, fried beancurd, fish cake, cockles & prawns or any other ingredients you like.
For us, I omit the fishcake and fried beancurd as my aunt don't like it. I used steam chicken, prawn & hardboiled egg. See pictures below:

Tortilla with Chicken & Cheese

My Sunday's breakfast - Tortilla with shredded chicken breast and assorted cheese wrap. Yummy yummy!!!

I tried this at The Food Safari few weeks ago and thought it was pretty easy to make at home. So this is my version of Tortilla...



Recipe - Tortilla with Chicken & Cheese
Ingredients:
4 pcs of Tortilla wrap (Available in Cold Storage)
1/2 Cooked chicken breast (Shredded)
1 no Tomato (Chopped)
1 no Gherkin (Chopped)
Mozzarella & cheddar cheese
Salt & black pepper
Lingham chilli sauce (optional)

Method:
1) Assembly the ingredient on half side of the wrap and fold over.
2) Heat a frying pan with olive oil.
3) Pan fry till both side of the wrap turn golden brown and cheese melt.

Simple Baked Macaroni

Baked Macaroni is one of my favourite. This morning I made myself a simple one to bring to work. I used the instant 'Grill Chicken Sausage Pasta Sauce" from Campbell's. It's available in all supermarkets and it's come in at least 5 flavors.



First, I slightly browned chopped garlic and sliced sausages till browned. Add in cooked macaroni and stir in half canned of the sauce till it cooked through. Add black pepper and pour into a disposal foil. Then top with mozzerella cheese and toast it at my office pantry till the cheese golden.

Bacon & Egg Muffin

I have been craving for Mcdonald's sausage muffin since last week so decided to fix one myself to bring to work. This is also my Di's favourite.

Home-made taste as good too though I use back bacon instead of sausage & top with a runny sunny side top egg & cheese.



This is the muffin I used from Sunshine, $2.80 for a pack of 4. The Glad rainbow bag, $1.50 for a box of 30 bags c/w 30 different pattern stickers. It's good for packing snacks & sandwiches for work. The bright colour bags & stickers just brighten up my day at work.
